By default, these keyboard shortcuts are stored in the Normal template, and, by default, the Normal template is saved when you quit Word. If you have 'Prompt before saving Normal template' enabled at File Options Advanced: Save, Word will ask your permission to save the template; if not, it will save without asking permission.

If your shortcuts are not being saved, it's because the Normal template is not being saved, and that's almost certainly because some third-party add-in is preventing it from being saved. One of the most notorious culprits is the PDF Complete software that comes installed on many HP systems. You probably don't need this (since Word 2010 can create PDFs on its own), and it causes more problems than it solves. On your system, the problem may be some other add-in.

Ultimately, you want to solve the problem that is preventing the Normal template from being saved, but as a temporary workaround, you can open the Normal template for editing and save the shortcuts directly. If you know how to locate and open Normal.dotm, you can certainly do so, but here's an easy way to access it:

In Word, press Alt+F11; the Visual Basic Editor opens. Press Ctrl+G to activate the Immediate window. In that window, type (or paste)

NormalTemplate.OpenAsDocument

and press Enter. Normal opens, but note that it may not be on top of all windows. You can close the Visual Basic Editor. Make the desired changes to the Normal file, and then save and close it. If the changes you have made have not been recognized as changes (the Undo button is not activated), press Spacebar, then Backspace to “dirty” the file, thus ensuring that the template will actually be saved.
